While focusing on “trend” versus “cultural shift” paradigms in cooking and eating, you may not be thinking of the broader context that has me in the dumps these days. If one considers the calculated exploitation of terms such as “farm-to-table” and “organic” and “natural,” I associate this with a larger cultural/political reality that might be summed up as the prevailing acceptance of lying in the place of truth-telling (so manifestly demonstrated from the top down this past week). In an age of “misinformation,” all the more thanks for your determination to weigh the facts, assess the damage, and offer something authentic with which we can nourish ourselves. Keep 'em coming.
